Pancakes with cinnamon waffle batter





I had to give it away so I don’t eat the whole stack. one word: FANTABULOUS :)

they’re not pancakes :)

alright, here’s the recipe:

  1. 2 eggs separated
  2. 3/4 cup butter milk
  3. 1/3 cup thick cream (قيمر)
  4. a pinch of salt
  5. 1/2 tsp cinnamon
  6. 1/2 tsp baking soda
  7. 1.5 tsp baking powder
  8. half a stick of melted butter
  9. 1 tsp vanilla – always use liquid
  10. 2.5 tablespoon of white sugar – can be adjusted to your taste
  11. 1 cup of flour
  12. an extra half a cup of skimmed milk



  1. beat the egg whites until they look like mushy squishy clouds
  2. mix everything else together, then fold in the egg whites (if you want waffles, discard the skimmed milk addition, if you want light pancakes, add the milk.. everything works)
  3. heat your skillet and drop 1/3 cup of batter. wait till it bubbles up then flip it. it will brown because of th extra sugar but the taste is unbelievable.


stack them up, drizzle some maple syrup on. if you feel like doing something fancy, have some whipped cream with either bananas or strawberries.

  3. hi basma, im trying out this recipe tomorrow, and was wondering, what do you do with the egg yolk? u separate the egg and whisk the whites, so do u add the yolk with everything else of do u discard of it altogether?

    and how do u suggest i incorporate ricotta into this mixture? u think i can substitute with the gaimar?

    Mix the egg yolks with everything else. As for ricotta, I don’t know if it can be incorporated, give it a shot. The safest bet is to add it on top of a pancake stack.

  5. DEEEEE-LIGHTFUL :D it can be eaten without any maple syrup…
    we had it with options of vanilla custard, rasberry jam, nutella or even just plain :)

  6. oh the ricotta idea i got from prime n toast’s ricotta pancakes…sooooo good…creamy like and melt in your mouth. i think they put chunks in while it was on the skillet. then flipped it over.
