Crab Egg Roll with Dipping Sauces.

 

 

 

 

Some say egg rolls, some say spring rolls. Based on research, rice based sheets are called spring rolls and the flour based sheets that I’m using for this recipe are called egg rolls. I used Americana’s spring roll sheets… it’s flour based so I’m confused heh..  let’s just say it’s a roll and leave it at that :)

OK, let’s start!

those egg rolls are sauteed with less than 1 tbs of olive oil and the rest of the ingredients are fat free, then its brushed with olive oil and baked in the oven until it’s crispy and delicious. To retain some of the moisture, we are serving them with two different types of sauces.

 

Ingredients:

  1. 12 Crab sticks
  2. 1 TBS light mayo (optional, its 10 calories per tbs and doesn’t contain any trans fat)
  3. 2-3 TBS fat free yogurt
  4. Crushed garlic
  5. 1/4 of a cabbage
  6. Medium onion
  7. Salt and pepper
  8. Few drops of Worcestershire sauce
  9. Enchilada spice (or cumin, cayenne, paprika and lime)

 

For the sauces:

Sauce 1:

  1. White vinegar
  2. Soy sauce
  3. Spring onions
  4. Few drops of chili oil
  5. Optional: soft brown sugar.

Sauce 2:

  1. Yogurt
  2. Garlic
  3. Lemon
  4. Salt and pepper
  5. Soy sauce
  6. olive oil or chili oil

 

Directions:

  1. For the sauces, you just mix all the ingredients together and adjust Qty per your taste. I personally prefer sauce 1
  2. For the stuffing: in a sauce pan, saute the onions with 1 tbs of olive oil Add the garlic all the spices to the pan and the shredded cabbage.
  3. Add the shredded crab sticks and keep on mixing
  4. take it off the heat when the cabbage whithers then mix in the light mayo and yogurt. you can omit the mayo if you want.
  5. Stuff the egg rolls as directed in the short clip below(you can jump to minute 4:15). I didn’t seal them with eggs since I’m Baking them. Content won’t fall apart but you can do this step if you want to. you can basically wrap them any way you want. they don’t have to all look alike :)
  6. Brush an oven tray with olive oil or use a wax sheet. Place the egg rolls on the tray and brush them with olive oil.
  7. Bake them in a hot oven until they’re crisp and serve them with the sauces.

    Where did you find the wrappers? I have been looking for them for a while now.
    And thats some neat work in the video. I roll them in similar way and I can’t imagine how will explain the wrapping when I make mine as I don’t do videos! May be I’ll link it to you :)
