It’s been one lazy month :). Sorry I haven’t been posting new recipes. I’ve been a bit busy with projects and I literally have no time to invent new dishes. but I’ve been cooking :)
All the dishes I’m going to post from today and up until I adjust to my new routine, are going to be easy, simple and suitable for any busy life.
Today is Sandwich/Salad day.
All you need is the following:
For the Sandwich:
- Go to The Baking Tray. Get a whole loaf and request medium slices.
- Spread the feta cheese first, then cover it with slices of roasted bell peppers, then add loads of rocca on top. mine has 4 times the amount of rocca you can see in the picture above :)
- I added a thin spread of pesto sauce in half of the sandwiches. Some preferred this addition. It’s worth a try
For the Salad:
- Crumble Feta cheese on top of the Rocca leaves. Add the roasted bell peppers and toss in the salad dressing.
It was a success. No left overs, and everyone was satisfied with their sandwiches and salad :). If you want, you can add balsamic dressing to the sandwich or dress the rocca leaves with the salad dressing but it’s tastier as it is.
ooh and I made sushi as well :), Finally been able to get the correct rice flavor. I’ll post it when I make it again. Didn’t take any pictures :)
