Cape Gooseberries Jam

I went to our grocery store the other day and got myself a box of cape gooseberries. Didn’t know what to do with them so I made the whole box into jam :)

Here’re what I did:

First, I washed the gooseberries and cut them in half.

In a pot, I started with boiling water and added a pinch of saffron and sugar. Once it started to boil and thicken, I added a squeeze of lemon and all the halved gooseberries and let them simmer until the whole thing reduced in Size.

When I tasted it, I felt that it needed more sugar because the gooseberries were a bit sour so I added 2 tablespoons of grape jelly and it turned out to be wonderful!

Try it if you’re feeling experimental :). If the gooseberries aren’t ripe, you need to add more sugar.

The way I make jams are no way going to be approved by the older generations :p – In a blender, i add any fresh fruit I want to turn into a jam, half an orange, a squeeze of lemon, and sugar and I blend them all together to make a thick juice then I drop the mix in a heated pan and let it reduce in size. Never had a problem with it and not even once did my jams go bad. Try it! :)
