Brioche/Croissant Sweet.

 

 

This is a 5 minutes pudding like sweet that tastes exactly like cinnabon’s original. I was baby sitting the neices yesterday. I gave them directions and they make the whole dish. that’s how easy it is. 

 

Ingredients:

  1. 1 big can of sweetened condensed milk or 2 if you want it extra moist
  2. 1 TBS Cinnamon
  3. about 1/2 to 1 cup of milk
  4. 1-2 flake bars
  5. Kiri cheese – or any other cream cheese. (I used about 9 or 10 pieces)

 

Directions:

  1. in a food processor, mix the condensed milk, cheese and milk together
  2. add cinnamon and half of the flake to the mix
  3. if you’re using brioche, I’d say add 1/4 stick of butter and mix it with the cheese. but I think Croissants will taste even better and you don’t need butter.
  4. place the criossants in the deep dish (if you’re using Brioche, tear it apart into 8 peices and arrange them to fill the dish) and pour the mixture on top
  5. sprinkle the rest of the flake on top and place it in the oven for 15-20 minutes in 170 heat. Keep an eye on the dish to make sure you don’t burn it. because I did ;) but it was fixable, thank god.

Sponge cake – Take 2

 

 

There are recipes that you really can’t cut the fat from. sponge cakes are one of those recipes.

just had a slice, LOVE IT. it ranks number 2 on my all times favorite sponge cakes :D..  my number one is my aunt’s sponge cake. No one can top it.

Recipe:

  1. 1.5 cups of white flour
  2. 2 sticks of butter (i removed the last 1.5 cm from the second stick)
  3. 3/4 cup of sugar (you can add as much as you like)
  4. 3 eggs separated
  5. 1 tsp vanilla
  6. 1 tsp almond flavor
  7. 1/4 tsp salt
  8. 1 tsp baking powder
  9. about 3/4 cup of milk.

Directions:

  1. sift flour, salt and baking powder together and set them aside
  2. melt the butter and mix it with the sugar then mix it with the other dry ingredients then add the milk.
  3. in another bowl. beat the egg whites until soft peaks form.
  4. beat the egg yolks until they’re creamy then mix them with the flour mixture
  5. fold in the egg whites gradually
  6. bake it for 40-45 minutes in a 175 degree, preheated oven

 

*** different flavors: Once you find a recipe you’re comfortable with, try creating different flavors. example: 1 tsp orange zest with 1/3 cup orange juice. cardamon, saffron, lemon. then we have fruity icing like icing sugar with the juice of any citrus fruit.

Sponge Cake

 

Got tons of recipes and pictures to share :), will try to add them as soon as I have time.

I’ve made this cake last week. turned out good. loved the way it smelled

 

 

Recipe:

  1. 2 cups flour
  2. 2 tsp baking powder
  3. 4 eggs
  4. 1 to 1.5 cup of sugar (you can go as much as 2 cups)
  5. 2 tsp vanilla extract
  6. 1 tsp almond essense
  7. 1 cup of skimmed milk
  8. 1/3 stick butter
  9. a pinch of salt

 

Directions:

  1. in a sauce pan, heat the milk and butter and set them aside
  2. beat the sugar and egg together until they’re well blended and creamy. the color has to be less yellowish and more white.
  3. add the vanilla and almond to the mixture and keep mixing on medium speed.
  4. mix the flour, baking powder and salt togethter and set aside
  5. gradually add the hot milk to the egg mixture while the mixer is still on and then add the dry ingredients.
  6. Grease a tube/ring pan and fill it with the batter. the pan should be not more than half full in order to give the cake enough space to breathe and expand.

 

heat: 175 degree celcius. for 45 minutes.

Semolina Breakfast

 

 

 

 

it can be eaten warm, cold.. as is, with berries, cinnamon.. whatever you want. can be made in advance, made and eaten right away. plus, its easy to make and very satisfying.

I will be fasting this month, this would be my daily sohoor.

  

Ingredients:

  1. 2 cups of skimmed milk
  2. a pinch of cinnamon
  3. a splash of vanilla
  4. 1-2 tbs sugar
  5. 5-6 table spoons semolina (سميد) .. depending on how thick you want it to be.
  6. a handful of berries or raisins if you want. I don’t like to add anything to it.

 

Directions:

  1. bring the milk to a boil
  2. add the sugar, vanilla and cinnamon.
  3. stir in the semolina and keep stirring until it thickens. you will see that the grains has doubled in size. taste it to see if they have softened or not.
  4. still in the berries or raisins (optional) if they’re dry, either add them with the semolina or soak then in hot water before use.

 

that’s it! :)

be careful, don’t over cook them. it thickens even more when its cold.

Chocolate Chip Muffins.

 

 

 

I woke up early, wanting something sweet but not too sweet and fast to make. so I made chocolate chip muffins. they’re not goumet muffins and not too fansy, but they’re quick and fulfillling :) .. great for kids too.

Recipe:

  1. 2 Cups flour
  2. 1 TBS baking powder
  3. 3/4 Cup milk
  4. 1/4 cup sour cream (or more if you find them too dry for you)
  5. 1/2 tsp salt
  6. a splash of vanilla (about 2 tsp)
  7. 1/2 Cup of sugar
  8. 1 egg
  9. 1/3 cup vegetable oil (a bit more splashes here and there won’t hurt)
  10. 3/4 cup semi sweet chocolate chips.

 

Directions:

  1. Combine all the dry ingredients together.
  2. beat the egg, vailla, milk, oil and sour cream together then add the dry ingredients
  3. fold in the chocolate chips.

 

Congratulations. You’re Done :)

now, spoon the batter in the muffin cups or tin, 3/4 full. they will rise a lot. if you’re making small muffins, they will take 10-11 minutes to fully bake. if they’re bigger then bake them for 18 minutes.

I added one chip on top just because I like how it looks like what it’s baked :)

Lemon Pudding cake.

 

I don’t know what to call this delicious lemony treat. it feels like pudding :)

I’ve lost my appetite in the past week, and nothing brings it back better than the aroma of lemon rind and lemon juice…

Directions:

you start with creaming the butter, sugar, egg yolks, and lemon rind together. when it all blends together it will become so silky and fluffy you just want to dive into it and live there forever. then add the flour, a pinch of baking soda and a pinch of baking powder. when its all combined together, add the lemon juice and milk.

in another bowl, beat the egg whites until it forms peaks, then fold it to the mixture. then bake it for 30-35 minutes in a water bath. (180 degree).

I’m doing a tiny experiment on the side. once the first batch is baked, i’ll add the picture and exact recipe :) 

Recipe:

  1. 3 eggs
  2. half a butter stick (I added a bit more, like 60% of the stick)
  3. 3/4 cup caster sugar
  4. 3/4 cup milk
  5. 1/3 cup flour
  6. 1/4 cup lemon juice
  7. as much lemon rind as you want. I added about half a table spoon.

 

Trial #1:without egg white: the flavors intensified and its half a cake, half a pudding.. sooo gooood but heavy. next time, I’ll make smaller servings 

 

 

Trial #2: with egg white: much fluffier, lighter flavor.

Apple Bread and Cookies.

Chocolate Chip cookies.

I have mentioned before that I’m working on a soft chocolate chip cookies recipe.  I think I might have found the right combination :) next time i’ll add half the amount of sugar. its too sweet for my taste.  crispy on the edges…

 

Apple Bread.

I didn’t want to wait for an hour for the bread to make, so I baked them in cup cake tins.

it took me 20 minutes. Good for breakfast on the go.

 

will be posting the recipes once I refine them.

Rich Chocolate Brownies – Love at First Bite <3

 

 

Seems like I’m doing a LOT of baking lately for some reason. the term “pour your heart into it” really does explain it all!

today’s dish is “rich chocolate brownies”

 

 

 

Recipe:

  1. 2 sticks of butter
  2. 2 cups white sugar
  3. 1 cup brown sugar
  4. 1 cup chocolate powder
  5. 1 cup semi sweet chocolate chips
  6. 1.5 cups of flour, (1, all purpose flour, .5 whole wheat)
  7. 1 tsp salt
  8. 2 tsp vanilla extract
  9. 4 eggs

 

Directions:

  1. Melt the butter, then mix it with the sugar, vanilla extract and eggs. make sure you gradually mix in the egg.
  2. sift all the dry ingredients together, then mix them with the butter mixture.
  3. mix in the chocolate chips
  4. you’re done :), pour them in baking plate (Always forget its name ;< )

 

heat: 175

time: I’m still trying to figure it out. after 40 minutes the cake tester still had batter on it. cracked the surface of the brownies while i was moving the plate (silicon plates are amazing but I can’t control its movement). I’ll add in an extra 30 minutes and update you.

the batter tasted great. and its a good experiment so far. I always make my brownies with real melted chocolate. but this seems like a winner recipe. if only I would know what’s the correct baking time :)

Earthy Cookies Recipe

 

 

it feels good to bake again :)

Today’s cookies were fun to make and filled with alternatives. so i’ll post the recipe the same way I baked it today.

 

 

Recipe:

  1. 2 1/4 cup flour
  2. 1/4 tsp salt
  3. Spice mix: 2 tsp ginger mixed with a bit of cardamon,  3/4 tsp cinnamon, 1/4 to 1/2 tsp cloves
  4. 1/2 tsp Baking soda
  5. 1/4 cup vegetable oil
  6. 1/2 cup or one stick of butter
  7. 1 cup of sugar
  8. 1 egg
  9. 2 tsp of orange juice
  10. 1/4 cup dark brown sugar or molasses (I used a bit of molasses and light brown sugar, but it would be much better if its only molasses)
  11. 1.5 tbs vinegar

 

Directions:

  1. preheat the oven to 175 celcius
  2. mix: oil, butter and sugar until its smooth. beat the egg and add the molasses and juice to the mixture. then add vinegar.
  3. mix all the other ingredients together then add them to the butter mixture.
  4. in a small flat plate, put about 3 TBS of sugar and keep it aside. form small or big balls of the dough, (depending on your preference) and drop the ball in the sugar. flatten the ball a bit then place it on the baking tray (white sugar facing upwards).. repeat this step until you fill up the tray.

 

if you made the ball slightly on the bigger size (as big as an egg), then bake the cookies for 11 minutes. if they’re smaller then 9-10 minutes are enough. make sure they cool on a wrack so that the soft spot in the middle dries up.

 

:), that would be it. I loved how crunchy it is from the outside while it still maintained its softness and warmth.

Baked Brie – death by brie.

 

I love brie, ALOT.. I love its taste with grapes and caramelized figs… I like to eat it with all sorts of fruits… its the only thing I would mess up my diet for ;) but not today! that was my snack hehe.

I had a very ripe brie laying around in the kitchen and I wanted to do something with it. I’ll leave you with the picture…

 

 

it was seriously delicious, I just couldn’t resist eating it.

Here’s the Recipe, I didn’t bake it as its directed. just cut the brie into cubes, dropped them in a bowl, threw a bunch of chopped walnuts and drowned them with maple syrup. they were yummy :)
